Spinach/Palak Poha

Poha is the unprocessed flattened rice used to prepare upma, chivda, idli, and many more. It is a traditional and widely preferred breakfast food mainly in the states of Maharashtra and Gujarat.

Poha is very easy to prepare and requires almost no cooking. A lot of people love cooking poha with a variety of vegetables. I like it just with green peas and onion occasionally adding some vegetables to give it an interesting twist.

Poha is a staple breakfast in our household. It is usually prepared on weekends when we are too lazy to cook breakfast. I am a working mom and I love recipes that are simple, quick, and yet healthy for the whole family. I love the way my mother used to cook varieties of poha dishes, and I try to cook them for my family. My mom used to serve poha as a snack during tea time with a glass of masala tea. It does not require any accompaniments, but you can garnish it with chopped onion, grated coconut, and a dash of lemon juice as you wish.

In this post, I am going to share the recipe for palak or spinach poha, which I cook when Aarav suddenly decides he does not like leafy vegetables. This recipe is loaded with the goodness of spinach which any picky eater would not say no to. It is so
easy to make. All you need to do is prepare palak puree by steaming the palak and then blending it in a food processor. Mix it with poha and then temper it using mustard, jeera, and channa dal.
