Lemon Idli

   Idli is a South Indian savory breakfast served mainly with sambar and chutney. Idlis are traditionally made using ground lentils and rice that is soaked and fermented overnight. It is a steamed dish, so it’s a good option as a lunch box for kids. It is a perfectly healthy food for kids as well as adults.

   Lemon idli is a quick and easy-to-prepare kid-friendly food. The kids will love this version rather than the boring plain idli. It can be prepared in just 5 minutes if you have the idli batter ready and with the minimum ingredients found in our kitchen.

   My son does not like the plain idli. I was wondering how to incorporate it into his routine. That’s when I remembered my mother’s lemon idli recipe. I tried it and it was an instant hit with Aarav. Now, I prepare lemon idly, once every week. My son loves them. He likes to eat it as it is without any curries. Hence it’s easy for me to prepare it as his breakfast and lunch box.

Ingredients:

 Mini idlis or idli batter to make idlis
 Mustard, cumin seeds, curry leaves,
 Asafoetidia,turmeric powder, salt
 Channa dal, peanuts
 Ghee or oil
 Lemon juice

STEP BY STEP INSTRUCTIONS

1. Steam the idli batter  and prepare the mini idlis.

2. Heat a pan and pour oil or ghee. Add mustard seeds and let it splutter. Now add cumin seeds, curry leaves, channa dal, peanuts.

 

 

3. Now add asafoetidia, turmeric powder to the pan, along with the mini idlis. Mix it for 2 minutes.

4. Add lemon juice to the mini idli ,mix well for a minute or two .The lemon idlis are ready.

5.Transfer it to the serving dish. Yummy idlis are ready to eat.
