Akki Roti

  Last year, during our stay at our friend’s house in Bangalore, who hails from Karnataka, I had the pleasure of tasting the delicious Akki Roti with coconut chutney for the very first time. The flavors were truly unforgettable, and even now, I can almost taste it on my tongue.

   Since then, Akki Roti has become a favorite and regular breakfast at my home. While my friend shared her recipe using homemade rice flour, I prefer of using store-bought fine rice flour, given my lazy nature. With just a handful of basic ingredients, you can create this delicious dish. Additionally, you have the option to add various veggies to make it even more nutritious.

   In fact, my son Aarav loves Akki Roti so much that I often pack two of them in his lunchbox. The best part is that they remain soft and enjoyable even hours later.

   Akki Roti, a Karnataka specialty, is the perfect choice for lazy mornings when you want to gather your family around the dining table for a delightful breakfast experience. There are multiple methods to prepare it, such as using a banana leaf, spreading it directly on a pan, using a wet cloth, or my personal favorite, using butter paper. The latter method has proven to be incredibly helpful, easy, and mess-free.

These gluten-free flatbreads, made with rice flour, vegetables, spices, and herbs, tastes delicious when you serve them hot with  yogurt, mint chutney, or any chutney of your choice to elevate the flavors even further.

So, let’s dive into the recipe for this scrumptious breakfast…..

Ingredients:

  • 1 bowl fine rice flour
  • 1/2 bowl grated carrot
  • 1/4 bowl finely chopped onion
  • 2 tablespoons finely chopped coriander
  • 2 finely chopped green chilies
  • 1 teaspoon cumin seed powder
  • Salt to taste
  • 2/3 cup warm water
  • Oil for cooking

Instructions:

1 In a bowl, add rice flour, grated carrot, chopped onion, chopped coriander, chopped green chilies.

 

2. Add cumin seed powder, and salt

3. Mix all the ingredients well to combine.

4. Slowly add warm water to the bowl.

5. Start kneading the dough. Ensure that the dough is soft and  easy for spreading.

6. Take a small portion of the dough and place it on a butter paper. Using your fingers, slowly spread the dough in a circular shape.

7. Create some holes in the roti to help it cook evenly on the pan.

8. Heat a pan and grease it with oil.Carefully transfer the roti from the butter paper onto the hot pan and Drizzle some oil on the roti and in the holes.

9.Cook the roti for about 2-3 minutes on each side until golden brown. and repeat the process with the remaining dough to make more rotis.

10.Serve the hot Akki Roti with coconut chutney, yogurt, or mint chutney.
