Beetroot Rice

    Kids always want interesting elements which intrigue them. These days kids are very fussy and do not like to eat local vegetables. They like junk food more than healthy home-cooked meals. Therefore it is more difficult for us moms to make healthy food for our kids. So, we always try to cook a healthy, wholesome, and delicious meal.

    Kids are always bored of the same plain rice served every day. They are always curious if we cook different coloured variety rice. Kids always judge the food by its appearance. If they are not impressed they won’t even touch the good. To bring a burst of colour naturally to the plain white rice, we add vegetables like beetroot, spinach, carrot, and many more. This food appeals to the kids and tricks them into eating it.This recipe is not only kid- friendly, but also vegan. This is also a perfect post pregnancy meal.

      In this post, I am sharing the recipe for beetroot rice. It is a simple and yummy Indian-style rice recipe that balances the sweetness of beetroot and the warm and mild flavour of Indian spices. It is simple to prepare with the ingredients which are always present in our Indian kitchen. It is a perfect lunch box recipe that our kids and family love to have.

      Beetroot is a locally available vegetable in India. It has a pinkish-red appearance. It has high potassium content which increases blood flow and also reduces blood pressure. These are also high in vitamin C and fibres, which have the ability to lower the bad cholesterol.

Ingredients

1. Cooking Rice – 1 bowl

2. For tempering
 1 teaspoon Oil
 1 teaspoon Mustard seeds
 1 teaspoon Cumin seeds
 1 teaspoon Channa dal
 Curry leaves

3. Other Ingredients

1 teaspoon salt
 ½ cup chopped Onion
1 spoon chopped ginger
 ½ cup Green peas
 1 tablespoon Peanuts
 ½ teaspoon Turmeric powder
½ teaspoon Chilli powder

How to cook rice…?

1.Wash and rinse the rice well in running water.

2.In a pan, boil 3 cups of water and add 1 teaspoon oil and salt .Add the rinsed to rice to the boiling water. Cover and cook for 10 minutes or until the rice is cooked.

Step by Step method to make beetroot rice:

1.Heat pan, add oil .When the oil becomes hot add mustard seeds ,cumin seeds, curry leaves and let them splutter.Now add channa dal, chopped onion, green peas, peanuts and ginger.

2. Add channa dal, chopped onion, green peas, peanuts and ginger.

4.Add then grated beetroot and let it cook for 5 minutes. Then, add turmeric powder and chilli powder and cook until the raw smell goes. 

5.Now add the cooked rice to the pan and cook for 5 minutes or until they are combined well.

6. And beetroot rice is ready…

Some Tips
1. The recipe works best with the leftover rice.
2. Cook the rice first and let it cool down completely before proceeding to other steps.
3. You can add other vegetables like potatoes, cauliflowers and many more to make it a balanced meal.
4. Garnish it with fried cashew nuts and coriander leaves for that extra special taste.
