Vegetable cheese toast is a perfect for lunch box, snack and as light evening dinner. It can also be served with some milkshakes for your kids birthday party or play dates.
It is a perfect option for picky eaters, who does not eat vegetables. They will love the vegetables blended with melted cheese.
My son loves to have this toast with tomato ketchup. This is an easy recipe prepared with your choice of bread and toppings. It can be prepared fast in the mornings when you are running out of time.
INGREDIENTS
Whole wheat bread 4 slices
Chopped vegetables 1 cup
(corn, carrot, green peas)
Milk ½ cup
Butter 2 tablespoon
Cheese ½ cup
Salt as per taste
METHOD
1.Heat a pan ,add butter, wheat flour and mix well in low flame for 1 minute.
2.Add milk, salt, pepper and cook well for a minute. The white sauce is ready.
3.In a separate pan add butter ,vegetables and sauté them well.
4.Then add salt, chilli powder and cook well for 3-4 minutes.
5.Take the bread ,spread the filling evenly and sprinkle cheese.
6.Transfer it to oven and bake for 5 minutes or until the cheese melts and bread slices are brown and toasted.
7.Sprinkle oregano and pepper. Serve and enjoy with ketchup.
Some tips:
1. You can use any vegetable of your choice like sautéed mushrooms, steamed spinach and even paneer.
2. For more flavour add olive oil.
3. You can use any type of breads like white bread, multi grain or wholewheat bread.
